The method I use the most is to use the Channel Mixer. Have a look at each of the red, green and blue channels. Decide which of the channels gives the best-looking conversion and bias the mix towards that channel or try something like 25, 40, 35 as a starting point.
Select the monochrome output box in the bottom left of the Channel Mixer box. Later you can change the mode to greyscale if you wish.
You can blend layers with different channel mixes using masks if you wish to use a different channel mix in some parts of the image to others.
There are simple one-step ways (change the mode to greyscale, or desaturate) but these tend to give inferior results to the channel mixer.
