Q. Shooting in RAW

Hello peoples

I am foolishly agreeing to shoot my cousin's wedding next year, and so have been reading anything and everything I can get my hands on that might help me out.
I have no experience in shooting RAW, but am thinking that it would be a good idea should I stuff up exposure settings etc and need to tweak the odd (probably all hahaha) image.
What I need to know is... what is involved AFTER the day is over? What do I do next? Convert to JPEG after the work is done etc?? I am totally clueless here, so please forgive me
