Ya know... we (my wife and I) had 30 current bushes just a few years ago. But it has come to our attention, horses eat curent bushes...to the ground... and now, we have nothing in the current vein. Still, this ais a very good photo and it brings back many memories. Currents... love 'em!!

4 L red currants 375 mL water 1.75 L sugar
Crush berries in a large open kettle. Add water and bring to a boil for 10 to 15 minutes. Stain in a cotton bag and let drip overnight.
Do not squeeze. Measure out 1625 mL of juice. Add 1 box of pectin crystals. Bring to a boil
and boil hard 1 min. Add 1750 mL of sugar. Bring to a full rolling boil again and boil hard for 1 minute. Pour into jelly glasses and seal with hot wax.
